The Inventory

  • 1 Large Sweet Onion

  • 3 Medium Carrots

  • 3 Whole Or Minced Garlic Cloves

  • 1 Finely Chopped Jalapeno (Seeded)

  • 1 Tbsp Cumin

  • 1 Tbsp Spanish Paprika

  • 2 Tsp Chili Powder

  • 1 Tsp Oregano

  • 1 Can Diced Tomatoes

  • 1 Can Black Beans

  • 1 Can Secondary Beans (Garbanzo, Kidney, Or White)

  • 1/2 Bag Frozen Corn

  • 4 Cup Veggie Broth

  • 1/2-1 Tsp Salt

  • 4-6 Corn Tortillas

  • 1-2 Avocados (For topping)

  • 1 Bunch Cilantro (For topping)

  • 8 Wedges Lime

The Protocol

  • The Aromatic Activation: Coat the bottom of a large pot with a thin layer of broth. Once sizzling, add the onions and garlic. Sauté until the onions are translucent.
  • The Spice Infusion: Add the jalapeno, cumin, paprika, chili powder, and oregano. Stir for 2 minutes to bloom the spices. Add only half the salt at this stage; you will calibrate the seasoning during the final set.

  • The Final Calibration: Taste the broth and add the remaining salt if needed. If you used whole garlic cloves, remove them now or mash them into the broth for a more intense flavor profile.
  • Deployment: Ladle the soup into bowls. Top generously with the toasted tortilla strips, fresh avocado chunks, and cilantro. Finish with a heavy squeeze of lime juice to brighten the mineral profile.
